Ingredients

Scale
  • Carrots 4 medium
  • Pineapple in syrup 1 cup
  • Raisins ½ cup
  • Mayonnaise or plain yogurt 2–3 tablespoons
  • Lemon juice 1 teaspoon
  • Chopped walnuts 1 tablespoon

Instructions

  1. 1. Prepare the carrots: Wash, peel, and grate the carrots using a box grater or food processor. Transfer them to a large mixing bowl.
  2. 2. Prepare the pineapple: Drain the pineapple thoroughly and chop it into small pieces if needed.
  3. 3. Add the raisins: Measure the raisins and add them to the bowl. If they are dry, soak them in warm water for 5 minutes, then drain well.
  4. 4. Combine the ingredients: Add the pineapple to the grated carrots and raisins. Toss gently until evenly combined.
  5. 5. Customize the salad: If desired, stir in mayonnaise or plain yogurt for creaminess, lemon juice for freshness, or chopped walnuts for crunch.
  6. 6. Chill: Cover the bowl and refrigerate for 20–30 minutes to allow the flavors to blend.
  7. 7. Serve: Stir gently and serve the salad cold as a refreshing side dish.
